Baptist is the underwriting sponsor of a monthly health newsmagazine show called Smart Medicine, which is broadcast on WKNO-TV Channel 10. Hosted by news anchor Joe Birch, the news program features various Mid-South medical and health experts discussing the latest health news and services available in the area.

MEDITERRANEAN ROLLUPS

This is a great vegetarian sandwich that even meat-lovers can enjoy. Cut in smaller pieces to make a wonderful appetizer!

Prep Time: 5 minutes
Makes 1 sandwich / 7 appetizers
One appetizer serving: Calories 20; Sodium 55; Fat 0.4 g; Carbohydrate 3g; Cholesterol 1 mg; Fiber 0.7g; Protein 1g.

Ingredients:
1 10" Lavash flat bread or flour tortilla
1/4 cup ready-made hummus
1/4 cup ready-made tabouli
Romaine lettuce leaves, whole or chopped
Alfalfa or bean sprouts (optional)
1/2 tomato, chopped


Directions:
1. Lay flat bread/tortilla out on a flat surface.
2. Pile the Hummus and Tabouli each in a long row – side by side.
3. Add generous amounts of the romaine lettuce.
4. Add sprouts, tomato, etc as desired.
5. Start at edge of the long row and roll up.
6. For appetizers – wrap in plastic wrap and let the “set” in the refrigerator for 2 or 3 hours (to make easier to cut).
7. Cut 1 to 1 1/2 inch pieces using a serrated knife and a sawing motion.

NOTE: Lavash (Lawash) can sometimes be found in the deli. If you prefer, you can just use the hummus without the tabouli. Add cucumber and some of your favorite vegetables with a little fat-free or lite ranch dressing and you have another great wrap!
