Hosted by news anchor Joe Birch, the news program features various Mid-South medical and health experts discussing the latest health news and services available in the area.

GRILLED SALMON MONTREAL

The moderate flavor and moist meaty texture of salmon make it an ideal partner for the bold flavor of this terrific marinade.

Prep Time: 5 minutes
Marinate: 15 minutes
Cooking Time: 15 minutes
Serves 8
One Serving: Calories 201; Sodium 242 mg; Fat 13 g; Carbohydrate 0 grams; Cholesterol 57 milligrams; Fiber 0 grams; Protein 21 grams.

Ingredients:
1 package Montreal steak marinade
1/4 cup water
1/4 cup olive oil
2 teaspoons white wine vinegar
1/4 teaspoon dill weed
2 pounds salmon* fillets or steaks


Directions:
1. Mix marinade mix, water, oil, vinegar and dill weed in small bowl. Place salmon in large resealable plastic bag. Add marinade; turn to coat well.
2. Refrigerate 15 minutes or longer for extra flavor. Remove salmon from marinade, reserving remaining marinade.
3. Grill over medium-high heat 6 to 8 minutes per side or until opaque and fish flakes easily with a fork, brushing with reserved marinade halfway through cooking. Discard any remaining marinade.


*Note: Wild-caught Alaskan or California Salmon is a smart choice. Substitutions: Pacific Halibut or Ahi or Albacore Tuna
