BLUEBERRY BUCKLE
This recipe is easy to make and has no fat!
Prep Time: 15 minutes
Cooking Time: 35 minutes
Serves 8
One Serving: Calories 165; Sodium 72; Fat less than 1 gram; Carbohydrate 39 grams; Cholesterol 0 milligrams; Fiber 4 grams; Protein 3 grams.
Ingredients:
2 bags (12 oz each) frozen blueberries or 2 pints fresh blueberries
3 tablespoon sugar
1/2 cup orange juice
1 cup whole-wheat pastry flour or 1/2 cup whole wheat flour and 1/2 cup all-purpose flour
1/2 cup sugar
1 tsp baking powder
3 egg whites
1/4 teaspoon lemon, orange or almond extract (optional)
1 tablespoon sugar
Directions:
1. Preheat oven.
2. Spray 9 X 13 inch pan with nonstick cooking spray.
3. Place blueberries in baking dish. Sprinkle 3 tablespoons sugar on top and add juice.
4. Mix next block of ingredients together (flour, sugar, etc.). Drop eight equal spoonfuls of dough on top of the blueberries in two rows of four.
5. Sprinkle last tablespoon of sugar of the dough. Bake for 35 minutes or until cake is lightly browned.
6. Serve warm. Can add a scoop of fat-free vanilla ice cream or yogurt.
