Ingredients:
1 loaf (1 pound) French bread, cut into 36 slices
2 tablespoon oil
1 pound plum tomatoes, chopped (about 2-1/2 cups)
1 package (4 oz.) Crumbled Feta Cheese with Basil & Tomato, finely chopped
1/2 cup finely chopped red onions
3 tablespoons chopped fresh parsley
1 tablespoon chopped pitted ripe olives
1/4 teasoon pepper
Directions:
1. Preheat broiler. Place bread on baking sheet. Broil 2 to 3 min. on each side or until lightly toasted on both sides. Brush 1 side of each toast slice with 1 tablespoon oil.
2. Mix tomatoes, 1 tablespoon remaining oil, the cheese, onions, parsley, olives and pepper.
3. Spoon about 2 teaspoon of the tomato mixture onto each toast slice just before serving.
Tips:
Store ripe tomatoes, stem-sides down, at room temperature away from direct sunlight. For best results, use within a few days after purchase. Do not store whole uncut tomatoes in the refrigerator as this will result in loss of flavor.
