Chipotle Grilled Chicken Skewers


1 pound boneless, skinless chicken breast
1 ½ teaspoons chipotle chile pepper
1 teaspoon paprika
1 teaspoon oregano leaves
1 teaspoon garlic salt
½ teaspoon ground cumin
2 teaspoons brown sugar


  1. Cut chicken into 1-inch wide strips. Combine seasonings and brown sugar; mix well. Evenly rub each chicken strip with seasoning mixture until completely coated.
  2. Thread the chicken in zigzag fashion onto skewers. Spray each strip thoroughly with nonstick cooking spray.
  3. Grill over medium heat or broil 8 – 10 minutes, turning occasionally. Serve with Sweet and Tangy Mustard Sauce.

Chipotle chile pepper adds its smoky flavor and heat to these grilled chicken skewers. Served either as an appetizer or as a main dish, the chicken is great with Sweet and Tangy Mustard Sauce.
